1. Give a special touch to dishes with capers

Capers are there to give dishes a particularly tasty taste. Most often they are used in cooking a range of dishes.

Real capers come from the caper bush (also called Fliders rose), which canbe found in the whole Mediterranean area. Since ancient times, capers have been considered a spicy spice, but you are also assigned the value of a medicinal plant and an aphrodisiac. Capers also contain a high proportion of antioxidants. They are therefore considered to be particularly healthy.

However, you won’t find any real caper bush on your doorstep. For this, you can make your own capers recipe with the help of buds of the gooseflower, dandelion blossoms or capuchin cress. These are known as ‘mock capers’… We will show you how to do it in the following guide.

2. Make your own capers recipe – step by step instructions

2.1. Step 1: Harvest

Go to a meadow early on a spring day or summer day, even before sunrise. Take a flashlight with you and look for daisies or dandelions.

However, you should only look for plants whose buds are not yet open. If you don’t want to search the meadow for daisies or dandelions, you can also simply collect the buds of the capuchin cress that may grow in your garden.

Of course, you can also buy capuchin cress in the supermarket.

2.2. Step 2: Put the buds in salt

After collecting enough buds, you should sprinkle them at home with plenty of salt to make capers from capuchin cress, dandelion or daisies. The buds are then left standing for an hour.

2.3. Step 3: Put capers with vinegar

Now the buds are given in herbal vinegar or tarragon vinegar. Bring the mixture to the boil and simmer for a minute. Put the buds in a sieve and drain well. By the way, you should bring some vinegar to the boil.

There are many recipes for making capers yourself. Which vinegar you choose is up to your personal taste.

2.4. Step 5: Filling homemade capers

Now put the capers together with the vinegar in a clean glass. Close well and store in the fridge for a few days.

2.5. Step 6: The Last Finish

After about 3 days, drain the vinegar, heat it again and put it over the capers again. Then close the glass jar tightly and store in a cool place for a week. When you make your own capers recipe, you will hardly taste a difference to real capers.
