Difference between jam, preserves and jelly
Did you know that in Europe, according to an EU directive, only spreads made from citrus fruit can call themselves jam? One kilogram of jam must contain 200 grams of fruit, fruit juice, peels and fruit market. Otherwise, only water and sugar is allowed.
All other spreads consisting of fruits such as currants, strawberries,raspberries, plums or pears are preserves. Jam that uses only the juice of the fruit, is called jelly. The main components of a jelly are fruit juice and sugar. This spread does not contain any fruit pieces or seeds.
Steps to make jam
- Before you start preparing the fruit, you should first rinse the screw glasses with internally coated screw caps with hot water and then place them on a clean tea towel for drying. Now you should get everything you need for the manufacturer of the jam: a large cooking pot,a cooking spoon, a knife, puree stick, the kitchen scales, a packet of gelling sugar and of course just over a kilogram of fruit. What fruits you take is entirely up to you. Of course, you can also combine different fruits.
- Once you have decided which fruits you want to take, you should first wash, peel or core them and cut them into small pieces.
- Only now can you weigh the fruits. If you had done it before the fruit was prepared, the quantity ratio with the sugar would not be right now. When making a jam, the gelling sugar is always added in a ratio of 1:1 to the fruits, i.e. on one kilogram of fruit you add one kilogram of gelling sugar, i.e. a pack.
- Now put the fruit in the pot. If you want to make a particularly fine jam, then you should crush the fruits with the puree stick before cooking.
- Now, stirring constantly, add the gelling sugar to the mixture.
- Now you have to heat it all up. Note that you do not forget to stir. The jam can also overcook very quickly. Cook the puree for about four minutes. If you want to check whether the jam has the right consistency, then you should put a teaspoon of jam on a cold plate. If the jam is firm, then it has the right consistency.
- Now it has to be fast. If possible, fill the jam into the jars. Then tighten the glasses and place them on the head. Now leave the glasses to stand like this for about ten minutes. And your homemade jam is ready.
If you now want to snack on your jam at breakfast, you should always take it out of the glass with a spoon and not with the butter knife, otherwise it can start to mould very quickly.
