For me, gingerbread has been one of the absolute favourites when it comes to Christmas pastries since I was a child. No wonder, because our Bavarian city of Nuremberg is world-famous for its original Nuremberg gingerbread, known as Lebkuchen. Gingerbread was baked there as early as the 12th century. The city was a crossroads for several trade routes and therefore had the most diverse spices from all over the world, which were later needed for the basic recipe of gingerbread. Today you can find the Nuremberg gingerbread on almost every Christmas market and they are as popular as ever.
A simple and easy gingerbread recipes variation of the Nuremberg gingerbread is this recipe. You don’t have to spread the finished mixture on baking boblates with a lot of effort as in the original and glaze each gingerbread individually, but you can put all the ingredients on a baking tray after mixing and bake the gingerbread like a tin cake. Cut into beautiful diamonds and finished is your alternative to the classic gingerbread, which tastes just as good but is prepared in a hurry.
Vegan Gingerbread
Maybe you feel the same way as i do, and after you’ve been at dinner continuously in the run-up to Christmas and during the holidays, the bad conscience sets in every year. For the new year is at the top of the list of intentions to eat healthier and do more sports.
Especially the delicious cookies always make it difficult for me, because they are just so delicious and as a small snack in between or for coffee and tea find their way into my mouth. That is why I am particularly pleased with this easy gingerbread recipes. The gingerbreads do without industrial sugar and animal products and are therefore not only healthier, but also do not migrate so quickly to my hips.
How to use leftover gingerbread
The vegan way of life is more popular than ever and almost every dish already has a variant without animal products. When I’m at Oktoberfest, I love walking past the stalls of gingerbread hearts. In many different shapes and decorated with colorful icing, they simply look gorgeous. Especially in English-speaking countries it is very popular to bake the gingerbread also at Christmas time in the form of small males. Just like our gingerbread hearts, these “Gingerbread Men” are pierced and decorated after baking. I also love to bake gingerbread men because they are so easy to prepare and a feast for the eyes on the cookie plate. You can also use other shapes such as snowflakes, fir trees or geometric shapes. There are no limits to the imagination, whether in the shape of the cookies or the design of the icing decoration. If you punch a small hole in the dough before baking, you can even hang it on the Christmas tree or on gifts with the help of a fabric ribbon or a solid string.
My tip on how the gingerbread will last longer: One to two days after baking, put the gingerbread in an airtight tin can. On the bottom of the tin and after each layer of cookies you place a piece of parchment paper. If they are already hard before you put them in the tin, you can put half an apple in as a little trick. Due to its moisture, they become beautifully soft again. However, the apple half should be replaced every other day so that it cannot start to mould. To make your gingerbread feel fruity, you can also add a piece of orange peel to the tin. However, make sure that the orange is untreated. Try this trick with this gingerbread recipe!
