Ingredients for 4 artichokes:

  • 4 fresh artichokes 
  • 2 organic lemons 
  • a little salt and sugar
  • possibly disposable gloves

Cook artichokes easily: Step 1

Halve and squeeze one of the lemons. Put the juice in a large bowl and add water. To prevent hands from turning brown when preparing artichokes, halve the other lemon and rub hands with one of the halves. Alternatively use disposable gloves. Wash the fresh artichoke under cold water and dry with a towel. Cut the stalk with a sharp knife just behind the flower bud. Rub in the cut surface with lemon juice. 

Step 2:

All outer leaves and all leaves that are damaged, tear off with your fingers directly at the base or cut with a kitchen scissors. Also cut off the tips of the remaining leaves. These can be prickly and give the enjoyment of artichoke a pieksigen break. Cut the upper quarter of the vegetables with a saw blade and then place the artichoke in the bowl of lemon water. This is the only way to maintain their rich green color. 

Step 3:

Bring salted water to a boil in a large saucepan. Add a pinch of sugar and the rest of lemon juice. Carefully place the prepared artichokes and cook with the lemon halves over medium heat for 30-45 minutes. Tip: To keep the artichokes under water all the time, place a lid that is slightly smaller than the pot on the vegetables. The artichokes are ready when a leaf can be easily pulled out (see picture above). Remove the finished artichokes from the pot and drain.

Step 4:

Start with the leaves. These can be plucked from the outside inwards all around and suck out great. In combination with delicious dips such as the leek and mascarpone dip or a spicy guacamole , the artichoke leaf tastes even better. Slowly work your way to the floor by removing the thin inner leaflets to expose the “hay”. Remove this with a teaspoon and. Then peel the bottom of the base and enjoy the real highlight of the artichoke – the base itself.
