This variant is slightly creamy with coconut milk, spicy with roasted peppers and simply heavenly.

ingredients

For  4 people

  • 1  red chili pepper 
  • 1  onion 
  • 1  clove of garlic 
  • 2 tbsp oil 
  • 2 tablespoons flour 
  • 1 pck (à 500 g) passed tomatoes 
  • 1 tin (s) (à 400 ml) unsweetened coconut milk 
  • 100 g roasted peppers (glass) 
  • 500 g of salmon fillet 
  • 1 tin (s) (à 425 ml) cherry tomatoes 
  • 1  spring onion 
  •    Salt, pepper, sugar, ground coriander 
  • 1/2  lime 

preparation

25 minutes   very easily

  • Clean the chili pepper, cut it lengthwise, core it, wash it. 
  • Peel onion and garlic. 
  • Chop everything, fry in hot oil in a large saucepan. 
  • Dust with flour and sweat briefly. 
  • Pour in the tomato, coconut milk and 1/4 liter of water. 
  • Bring to a boil while stirring, stir in the roasted paprika. 
  • Cover and simmer for about 5 minutes, then finely puree.
  • Rinse the fish, pat dry and dice. 
  • Add the cherry tomatoes and juice to the tomato soup and let it simmer for 3-4 minutes over low heat.
  • Clean the spring onion, wash and cut into long strips. Season the soup with salt, pepper, cilantro, sugar and lime juice. Sprinkle with leek onion strips.

ingredients

For  4 people

  • 1 bunch of bay leaves 
  • 1  clove of garlic 
  • 1  onion 
  • 4 tablespoons olive oil 
  •    dried oregano, salt, pepper, rose paprika 
  • 1 tin (s) (425 ml) lumpy tomatoes 
  • 1 tbsp vegetable broth (instant) 
  • 1 tin (s) (425 ml) white beans 
  • 300 g of baked beans 

preparation

  • Clean and peel soup greens and wash. 
  • Cut leek into rings. 
  • Dice carrots and celery. 
  • Peel garlic and onion, dice. 
  • Heat oil in a pot. 
  • Fry prepared vegetables, onion, garlic and 1 teaspoon of oregano in them. 
  • Add tomatoes and 1 liter of water, bring to a boil and simmer for about 5 minutes. 
  • Stir in broth.
  • Rinse the white beans in the sieve and drain. 
  • Add the beans to the soup and cook for about 8 minutes. Season with salt, pepper and paprika.

  • 2  onions 
  • 1  clove of garlic 
  • 1/2  cauliflower 
  • 2 tbsp oil 
  • 100 g bulgur 
  • 2 packs (500 ml each) passed tomatoes 
  • 1 teaspoon vegetable broth (instant) 
  •    salt 
  •    pepper 
  •    sugar 
  • 4 tbsp balsamic vinegar 
  • 150 g of dried tomatoes 
  • 100 g of whipped cream 
  • 200 g of feta 
  • 4 tsp of liquid honey 

preparation

30 minutes   very easily

  • Peel onions and garlic, finely chop. 
  • Clean cauliflower, wash, divide into florets. 
  • Heat oil in a large saucepan. 
  • Saute everything in it. Bulgur, passed tomatoes, add 400 ml of water and broth.
  • Season with salt, pepper, 3-4 teaspoons sugar and vinegar. 
  • Bring to low boil and simmer for about 15 minutes.
  • Cut dried tomatoes into strips. 
  • Add with cream, bring to the boil again and season to taste. 
  • Serve, crumble the cheese roughly and drizzle with honey.

Tomato and zucchini cream

For  4 people

  • 2  onions 
  • 2 (about 100 g) sticks of celery 
  • 200 g of zucchini 
  • 4 tablespoons olive oil 
  • 1 tin (s) (850 g) of tomatoes 
  • 250 ml vegetable broth 
  • 1/2 tsp sugar 
  • 100 g of whipped cream 
  •    salt 
  •    freshly ground pepper 
  •    basil 

preparation

30 minutes   very easily

  • Peel onions and dice roughly. 
  • Wash and clean celery and zucchini and cut into pieces. 
  • Heat 2 tablespoons of oil in a large saucepan. 
  • Fry onions, celery and zucchini for about 4 minutes
  • Add tomatoes and stock, add sugar. 
  • Cover and simmer for about 20 minutes.
  • Puree the soup. 
  • Add the cream, bring to the boil and season with salt and pepper. 
  • Arrange soup in bowls and drizzle with 1/2 tablespoon of oil each. 
  • Garnish with basil and sprinkle with pepper.

Gyros tomato

ingredients

For  4 people

  • 1  medium onion 
  • 1  clove of garlic 
  • 500 g finished gyros meat (meat counter) 
  • 2 tbsp oil 
  • 1-2 tablespoons tomato paste 
  • 1 spread  EL flour 
  • 1 tin (s) (850 ml) of tomatoes 
  • 1 tsp clear broth 
  •    salt 
  •    pepper 
  •    sugar 
  • 1-2 tsp sep. oregano 
  • 200 g finished Tsatsiki (refrigerated shelf) 
  •    oregano 

preparation

30 minutes   light

  • Peel onion and garlic. 
  • Halve the onion and slice. 
  • Press in garlic. 
  • Fry gyros in 1 tablespoon of hot oil, turning for 5-6 minutes, then turn out and drain.
  • Heat 1 tbsp of oil in the pot. 
  • Fry the onion and garlic in it. 
  • Braise tomato paste and flour briefly. 
  • Stir in tomatoes and juice, 1/4 liter of water and broth, bring to a boil. 
  • Mix the tomatoes ith salt, pepper, sugar and oregano spices.
  • Cover the soup and simmer for approx. 15 minutes.
  • Lightly puree tomatoes, add gyros, bring to a boil and simmer for about 5 minutes.
  • Season the soup again. 
  • Garnish with a spoonful of tsatsiki and some oregano.
