Can I sharpen steel knives with a ceramic grinding stone? Yes, because the material is hard enough. Conversely, however, this does not work.
The world of knives is large and diverse. More and more amateur chefs are no longer using classic knives made of several steel layers in the kitchen, but also ceramic knives. But whether steel or ceramic, at some point every sharp blade becomes blunt.
However, to ensure that this does not remain the case, we give you tips on how to sharpen your ceramic knife correctly and show you which mistakes you should avoid.
1. The myth of the always sharp ceramic blade
Unlike steel, a good ceramic blade stays sharp for much longer, so you can use your kitchen knife for a long time without having to worry about a blunt blade.
Even if ceramic is very hard, ceramic knives also need fine sharpening from time to time.
With conventional abrasives, however, you have no chance of sharpening a ceramic blade, so you have to resort to special sharpeners to do the job.
Attention: Cheap ceramic knives are less sharp. They have a steel core that is only coated by a ceramic layer.
The biggest advantage, the hardness of the ceramic knife, is also a disadvantage, because the risk of breakage is significantly higher than steel.
2. Sharpen ceramic knives – these abrasives are suitable
Due to the hardness, the chosen abrasive should be particularly robust. Diamond sharpness is thereforebest. The artificial diamond grinding blades make it possible to remove even the hardest materials and to make the blade razor-sharp again.
Essentially, you can sharpen a ceramic knife in three different ways:
- Diamond sharpener: With this small device, you can’t do much wrong if you work with little pressure and always keep the blade straight.
- Diamond grinding stones or grinding angles: Here you have to prove a little more guidance yourself and first put on the ceramic knife at an approx. 20 degree angle and pull it to yourself.
It is best to moisten the grinding stone a little to bind the fine abrasive particles.
After repeated several times, switch to the other side of the knife and bend the knife there with an angle of approx. 60 degrees.
Be sure to work without pressure, but in fast flowing motions.
- Classic steel: You can also purchase the well-known steel with a special diamond coating. In contrast to the grinding stone, you work here with both hands at the same time.
This allows you to sharpen the ceramic knife faster, but you need to be very careful not to get hurt.
3. Sharpen ceramic knives – a simple step-by-step guide
To get the sharpness of your ceramic knife, we’ll show you how to use a grinding stone in this short guide.
- First, place the stone on a solid base so that it cannot slip. Now take the knife in your right hand.
- By slightly pressing your thumb on the blade, you can facilitate the guidance.
- In the next step, place the knife on the grinding stone at an angle of 20 degrees and pull the knife towards you.
- The blade should always be turned away from you so that you can’t get hurt.
- When pulling, perform a slight rotational motionso that the tip of the knife is more inclined to the grinding stone.
- Remember the number of repetitions and switch to the other side of the blade.
- An angle of 60 degrees is optimal. In turn, make sure that the sharp knife blade points away from you.
- Now perform the same number of movements to sharpen the ceramic knife evenly.
- Finally, wipe the knife with a cloth to remove abrasive particles.
By the way, many grinding stones have a coarse and a fine side. Choose the smoother surface with high grain if you regularly sharpen the knife.
